The home side had the chance to take the lead from the penalty spot after 63 minutes, but Diego Alves denied Ivan Rakitic.
Sevilla, who also finished with 10 men following a red card for Denis Cheryshev, continued to threaten in the latter stages, but Valencia held firm to extend their unbeaten run in the league to five matches.
